White Christmas Cake

Ingredients
  

  • 40 Ritz Crackers crushed
  • 1 1/2 cup sugar
  • 4 egg whites
  • 1 cup pecans coarsely chopped
  • 2 tsp. baking powder
  • 8 oz cream cheese softened
  • 1 1/2 tsp. vanilla extract
  • 12 oz. Cool Whip
  • 1/2 cup powdered sugar
  • 1 can crushed pineapple drained well
  • 1 sm. box coconut optional

Instructions
 

  • Preheat the oven to 300 F.
  • Lightly grease a 9 X 13 pan.
  • Mix Ritz cracker crumbs, pecans, and baking powder in medium bowl. Set aside.
  • Beat egg whites until stiff.
  • Add sugar and vanilla.
  • Fold into cracker mixture.
  • Pour in pan and bake for 30 minutes.
  • Cool completely.
  • Mix cream cheese and powdered sugar. Add Cool Whip. Blend well.
  • Stir in drained pineapple.
  • Spread over cooled cake. Top with coconut.
  • Keep refrigerated prior to serving.

Notes

Note: You can decorate your cake before or after refrigeration depending on what finishing touches you choose to use.
