Preheat the oven to 400 degrees. Prepare a rimmed baking sheet with parchment paper.
As the oven preheats, mix together the apple, pecan, cranberries, cinnamon, and honey.
Slice the chilled brie in half horizontally and place the bottom of the brie in the center of the puff pastry with the cut side up.
Spread half of the fruit mixture over the cut side of the brie on the puff pastry. Place the other half of the brie on top, so that the cut side is in the middle and the rind side is up.
Top the brie with the remaining fruit mixture.
Fold the edges of the puff pastry up over the top of the brie, pleating it as you work around the sides.
Place the brie on the baking sheet.
Use a cookie cutter to make leaf shapes or other festive cut-outs from the second pastry dough sheet for decorations, if desired. Gently press these onto the top.
Beat together the egg and water. Brush the brie with the egg wash.
Bake for 30 to 40 minutes or until the brie en croute is browned.
