Date Cookies (no sugar, no eggs)

Ingredients
  

  • 10 dates pitted/seedless
  • ¾ cup milk boiled, then cooled to room temperature
  • 2 tbsp butter room temperature
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cup whole wheat flour
  • 2 tbsp cocoa powder
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon powder

Instructions
 

Preparing the dough:

  • Boil the 3/4 cup of milk, and then let it come to room temperature.
  • Take 8 to 10 large dates and remove the seeds. Or you can use pitted brown or black dates.
  • Chop the dates into small pieces and place them in a blender along with the 3/4 cup of cooled milk. Blend or grind the dates with milk into a coarse paste.
  • In a mixing bowl, place the 2 tbsp of butter at room temperature. Add the 1/4 cup of oil and the tsp of vanilla extract.
  • Add the ground date paste and mix everything together with an electric mixer or hand mixer.
  • Sift in the 1.5 cups of whole wheat flour (you can use all-purpose flour). Next, add two tbsp of cocoa powder. Put 3/4 tsp of baking powder and 1/4 tsp of salt and 1/4 tsp of cinnamon powder.
  • Combine the dry and wet items with a spatula gently. Or, knead together with your hands – just make sure not to over-knead the cookie dough. The texture of the dates cookie dough should be thick.

Baking the date cookies:

  • Preheat the oven to 350F (180C).
  • Grease your cookie sheet with butter or oil and dust it with some flour.
  • Scoop out small portions of dough and place them on the baking sheet, leaving enough space between the cookies for them to enlarge while baking. Press and shape them gently with a fork.
  • Bake the dates cookies for 16 to 20 minutes until done. Check frequently after 15 minutes as these dates cookies can get extra browned in seconds towards the end.
  • Lay the cookies in a cooling rack for around 15 minutes to cook them down completely before serving.
