Ever wondered how to bake a cookie without sugar?

Today we have a cookie recipe made with delicious dates, milk, butter, and flour.

While these cookies aren’t technically sugar free, since they have the natural date sugar from the fruit, there is no added sugar in this recipe.

These taste absolutely great and you won’t miss the extra sugar.

About the Date Cookies

Dates are commonly grown in Southern California, Arizona, and southern Nevada. But more recently, this fruit has also become a Southern delight. Gardeners are beginning to grow date palms in Louisiana, Texas, and other regions of the South.

These eggless dates cookies will be chewy and sometimes chunky, but not crispy. Since dates are the primary ingredient in these cookies, they will be soft and a perfect fit for a snack or tea time.

To make these date cookies extra healthy, I used whole wheat flour. The wheat flour makes the cookies bit dense, and I prefer them that way. But you can certainly use all-purpose flour to make these cookies.

Can we also make these egg free date cookies a dairy free cookie?

Yes! If you are a pure vegan and prefer to avoid milk and butter, just follow these easy substitutes.

  1. Replace the milk with warm water in the recipe.
  2. Instead of butter, use an extra 2 tablespoons of canola or vegetable oil.

Date cookies no sugar, no eggs

Ingredients

  • 10 dates pitted/seedless
  • ¾ cup milk, boiled and cooled to room temperature
  • 2 tbsp butter room temperature
  • ¼ cup oil
  • 1 tsp vanilla extract
  • 1 ½ cup whole wheat flour
  • 2 tbsp cocoa powder
  • ¾ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp ground cinnamon powder

Directions

Making the Dough

  1. Boil the 3/4 cup of milk, and then let it come to room temperature.
  2. Take 8 to 10 large dates and remove the seeds. Or you can use pitted brown or black dates.
  3. Chop the dates into small pieces and place them in a blender along with the 3/4 cup of cooled milk. Blend or grind the dates with milk into a coarse paste.
  4. In a mixing bowl, place the 2 tbsp of butter at room temperature. Add the 1/4 cup of oil and the tsp of vanilla extract.
  5. Add the ground date paste and mix everything together with an electric mixer or hand mixer.
  6. Sift in the 1.5 cups of whole wheat flour (you can use all-purpose flour). Next, add two tbsp of cocoa powder. Put 3/4 tsp of baking powder and 1/4 tsp of salt and 1/4 tsp of cinnamon powder.
  7. Combine the dry and wet items with a spatula gently. Or, knead together with your hands – just make sure not to over-knead the cookie dough. The texture of the dates cookie dough should be thick like this.

Baking the eggless no sugar date cookies:

  1. Preheat the oven to 350F (180C).
  2. Grease your cookie sheet with butter or oil and dust it with some flour.
  3. Scoop out small portions of dough and place them on the baking sheet, leaving enough space between the cookies for them to enlarge while baking. Press and shape them gently with a fork.
  4. Bake the dates cookies for 16 to 20 minutes until done. Check frequently after 15 minutes as these dates cookies can get extra browned in seconds towards the end. My cookies were perfectly done by minute 18. They’ll be soft right after coming out of the oven, and will firm up once fully cool.
  5. Lay the cookies in a cooling rack for around 15 minutes to cook them down completely.

Date Cookie Tips:

1) The shelf life of these cookies will be about two days in a jar. They can stay good up to a week in the refrigerator. Just warm up in the microwave for few seconds before serving if stored in the fridge.

2) Use soft dates and grind or chop them very fine to make the date paste.

3) In case you need some extra sweetness, add 1/2 cup of brown sugar to the butter and cream well.

    These are reaallyy good. I used cashew milk and added a little bit more, about 1 cup, because I didn’t want the paste to be so thick and stiff (from what I was reading from the recipe) and the cookies came out great.

    I also only had hot chocolate powder on hand, so I used that instead of the cocoa powder.
