The term “deviled“, when talking about food, was a common phrase in the 1700’s. It referred to zesty or spicy foods.

When eggs were prepared this way, a healthy amount of mustard and pepper was typically used. In the U.S. they became popular and got the name “deviled eggs” around 1786.

In my local church, we LOVE to eat, and one of our members is the “queen” of deviled eggs…or should I say her husband is the king!!

She is always asked to prepare them for potluck lunches or dinners, and they are the first to go! We recently found out….he cooks them and she brings them!! A winning combination!

How far ahead can I make deviled eggs?

You can make one day and refrigerate up to 2 days in advance.

The key is to keep the whites and yolk filling separate. Wrap the egg white halves well with plastic wrap and keep the egg yolk filling sealed in an airtight container in the fridge.

If you decide to fill the whites ahead of time, put the prepared eggs in an airtight container lined with paper towels to keep them from “sweatingin the fridge, which can make them kind of soggy in a day or two.

The paper towels will help absorb extra moisture and keep them fresher longer!

What are some different ways to fill the deviled eggs?

When you are ready to fill your egg whites, you can just use the old fashioned method of spooning the mixture into the whites.

You can try using a small melon scoop as well. If you are trying to make them look “fancy”, use a piping bag and choose a tip that will give you the look you desire.
